Subrosa Wine

Sub rosa is a Latin term meaning ‘in secret’ but Adam and Nancy want everyone to share their love of great wine and food. The secret’s out and you’re in on it – lucky you.

Finding a name for a new winery is not an easy task…so Adam and Nancy turned to Adam’s favourite book, the Collins Australian Dictionary.

After finding several average label suggestions Adam handed the dictionary over to Nancy who randomly opened page 920-21. It was here she discovered sub rosa.

Adam is passionate about the high quality grapes grown in his home region and the neighbouring Pyrenees area. Being a local, he has great relationships with the growers allowing him to source the best quality fruit he can get his hands on.

Adam crafts Viognier, Rosé, Nebbiolo, Shiraz and Cabernet Sauvignon (for release 2019) for SubRosa.

His intuitive winemaking style focuses around minimal intervention – with little or no additions throughout the process – and has seen SubRosa attract early attention from some of Australia’s premier winemakers and reviewers.
